The modern category dates to 2015, when Seedlip launched in London as the first distilled non-alcoholic spirit and sold out its first thousand bottles in three weeks.
Botanicals are distilled or macerated one by one, usually in water, sometimes in a spirit base that is then stripped of its alcohol; the extracts are blended, filtered, and bottled at zero proof. Nothing is fermented to strength.
Juniper, citrus peel, and green herbs on a light, cool frame; without ethanol to carry weight the finish runs short, which is why it wants a sharp tonic and plenty of ice.

The idea is older than it looks: a 1651 book, The Art of Distillation by physician John French, records non-alcoholic distilled herbal remedies, and its rediscovery helped spark the modern category.
