Aperitivo hour, minus the alcohol: a bitter NA aperitif lengthened with cold soda over ice.
Typical way it's made: 2 oz NA aperitif, 4 oz club soda, orange slice
The spritz template is Venetian, born of Austrian soldiers cutting strong Veneto wine with a splash of water in the 1800s, and it was always a study in proportion over power. The zero-proof version rebuilds it from the modern NA aperitif shelf: bitter orange, cold soda, an orange slice. The aperitivo ritual never actually required the alcohol.
