Peter F. Heering, a young Copenhagen merchant, started with a cherry liqueur recipe passed along by his employer's wife and built it into one of Denmark's great exports.
Stevns cherries, a tart Danish variety, are crushed stones and all, steeped with spices in neutral grain spirit, sweetened, and aged in oak casks.
Stewed cherry and warm spice with a bitter-almond undertone from the kernels; sweet, but held together by oak.
Did you know
The Singapore Sling and the Blood and Sand both call for it by name; the almond note comes from the cherry stones, crushed along with the fruit.
