Agave-style alternatives arrived in the late 2010s on the heels of the first wave of distilled zero-proof spirits, aimed at the Margarita drinker taking a night off.
Methods split: most brands build on water with botanical extracts, capsicum heat, and natural flavors sketching cooked agave, while a few distill real blue agave and capture its character without ever fermenting to strength.
Roasted agave sweetness, green pepper, citrus, sometimes a wisp of smoke, all lighter-bodied than the real thing. Happiest in a Margarita, where lime and salt do the heavy lifting.
