Mexico's beloved grapefruit highball barely has a birth certificate: the paloma most likely dates to the years after 1955, when Squirt grapefruit soda first reached Mexico and found tequila waiting. The soda was always the soul of the drink, so the virgin version holds together: grapefruit, lime, salt, and cold bubbles built for hot afternoons.
Did you know
Paloma means dove in Spanish, and no one has proven why the drink carries it. Its breakout came in the mid-1990s around El PariΓ‘n plaza near Guadalajara, and it remains bigger in Mexico than anywhere else.
