Under Habsburg rule in the Veneto, Austrian soldiers found the local wines stronger than they were used to and asked for a splash of water; spritzen, German for to spray, named the habit. The template outlived the empire. This build retires the wine entirely: bitter NA aperitif, sharp lemonade, and sparkling water, and aperitivo hour carries on unbothered.
