Corsica's quinquina: muscat wine, cinchona bark and maquis herbs.

The Mattei house has made it in Bastia since 1872, when quinquina apéritifs were sold as much for the quinine as for the taste, and it remains the island's signature bottle.
A muscat wine base is infused with cinchona bark for its quinine bitterness, along with citrus and herbs from the Corsican maquis, then fortified and lightly sweetened. Blanc and Rouge are both made.
Blanc is honeyed and floral with a quinine snap; Rouge is darker, with orange peel and gentle spice. Both stay light on their feet at wine strength.
