Chambéry, France, early 19th century
The pale, floral style is credited to the houses of Chambéry in the Savoie foothills, where Dolin has made it since 1821. Martini added its Bianco in 1910 and turned the style into a household name.
A white wine base is fortified, sweetened, and infused with a lighter botanical bill than sweet vermouth: alpine herbs, elderflower, vanilla, and citrus peel, with no caramel, so it stays clear.
Vanilla, white flowers, and orchard fruit over a gentle wormwood bitterness. Sweeter than dry vermouth, lighter and brighter than sweet.

It is not a dry vermouth. Bianco carries nearly as much sugar as rosso, which is why a white Negroni built on it drinks softer than the classic.
