Tequila, lime, agave syrup. No triple sec, no salt rim. The 1990s San Francisco refinement of the Margarita.
Typical way it's made: 2 oz blanco tequila, 1 oz lime juice, 0.5 oz agave syrup
Julio Bermejo built it around the turn of the 1990s at Tommy's Mexican Restaurant, his family's San Francisco institution since 1965, swapping the Margarita's orange liqueur for agave nectar so nothing stood between the tequila and the lime. In 2008 the IBA added it to the official list, credited as the first venue-specific cocktail to make the manual.
Did you know
The spec only made sense at Tommy's: by the mid-1980s the restaurant had cleared mixto tequila out of its well, and Difford's Guide credits it as the first US restaurant to serve 100% agave exclusively.
