Equal parts bourbon, Aperol, Amaro Nonino, and lemon: citrus, bitter, and approachable, all at once.
Typical way it's made: 0.75 oz bourbon, 0.75 oz Aperol, 0.75 oz Amaro Nonino, 0.75 oz lemon juice
Sam Ross sketched it in 2008 as a favor for Toby Maloney, a former Milk & Honey colleague who needed a summer drink for The Violet Hour, the Chicago bar he had helped open. Ross's first draft used Campari; he thought better of it and reset the spec to equal parts bourbon, Aperol, Amaro Nonino, and lemon. The name came from M.I.A.'s 'Paper Planes', inescapable that year.

It debuted misnamed: Maloney transcribed the recipe from a slightly buzzed voicemail Ross left him and put it on the first menu as the 'Paper Airplane'.
