Friuli, Italy, 1992
The Noninos, Friulian grappa distillers, created Quintessentia in 1992 by resting the family's herbal amaro recipe on their own barrel-aged grape distillate.
Gentian, saffron, rhubarb, and bitter orange, among others, infuse a grape distillate that spends five years in barriques; blending and gentle sweetening finish it.
Caramel and orange peel over gentian bitterness, with saffron and a grapey warmth underneath. Lighter and brighter than the dark southern amari.

Sam Ross put it in the Paper Plane in 2008; the equal-parts drink turned a family bottling from Friuli into modern bar canon.
