Ireland and Scotland, 15th century
Distilling spread through medieval monasteries to Ireland and Scotland, whose records first mention grain aqua vitae in the 15th century; the Gaelic uisce beatha, water of life, wore down into 'whiskey'.
Grain is mashed, fermented, distilled, and aged in wood; national rulebooks draw the borders. Bourbon demands new charred oak and a 51% corn mash, Scotch and Irish three years in cask, and every tradition argues its way is obvious.
Runs from honeyed and orchard-bright (Irish) through vanilla and char (bourbon) to smoke and sea spray (island Scotch). Grain, still shape, and cask each get a vote.
