The sugarcane family: molasses or cane juice, white to inky, crisp to wildly funky.
Barbados, mid-17th century
The first records come from 1650s Barbados, where the fierce new cane spirit answered to 'kill-devil' and 'rumbullion' before plain rum stuck.
Molasses or fresh cane juice is fermented and run through pot or column stills. Broad traditions follow old colonial lines: Spanish-style rums lean light and clean, English-style heavy and estery, French-island rhum agricole grassy from fresh juice.
The spread is enormous: banana, molasses, vanilla, and oak in aged styles; grass and cane sap in agricole; bright near-neutrality in filtered whites.
Did you know
The Royal Navy issued a daily rum ration for over three centuries, ending 31 July 1970: sailors wore black armbands and tipped their last tots into the sea. The date is still toasted as Black Tot Day.
