Part of the same Burgundian family as crème de cassis, made where the fruit grows and originally drunk as an aperitif cut with white wine. Chambord, from the Loire, is the name most bars know.
Raspberries macerate in neutral spirit, then sugar brings it to crème weight. Some bottlings, Chambord among them, add honey, vanilla, and cognac.
Deep, jammy raspberry over heavy sweetness, with a tart edge when the fruit was good.
