Anatolia's grape spirit took on anise under the Ottomans and moved from meyhane taverns to the center of the Turkish table, where it now ranks as the national drink.
Fresh grapes and sun-dried raisins ferment into suma, the base distillate; a second run through copper stills folds in aniseed. Turkey protects raki as a geographical indication tied to Turkish-grown grapes and anise.
Clean grape spirit under a wave of sweet anise: licorice, faint pepper, a long cooling finish. Iced water turns it opal white and softens the edge.
