The zero-proof spirits category opened with non-alcoholic gin in 2015 and reached rum a few years later, once bar demand made a stand-in for the daiquiri and the mojito worth engineering.
Botanical distillates, cane and molasses extracts, spices and oak character are blended in water and bottled at zero proof; some producers strip the alcohol from a real spirit instead. Nothing is fermented to strength.
Molasses and burnt sugar with vanilla, allspice and a suggestion of oak. The body is thin without ethanol, so it wants lime, sugar and hard shaking.

Rum's signature comes largely from esters thrown during fermentation and aging, which is why zero-proof versions lean so hard on spice and oak extract to imply what the alcohol would normally carry.
