The dry style followed non-alcoholic sweet vermouth into bars, aimed at drinkers who wanted a cold stirred Martini rather than a soft drink.
Dealcoholized white wine or grape juice infused with wormwood, chamomile and citrus peel, kept lean and low in sugar so it reads dry rather than sweet.
Green apple, lemon peel and dried herbs over a clean bitter finish. Lighter-bodied than true vermouth, so it wants a hard chill and a short build.
