Joseph Noilly fixed France's pale dry style from 1813 and his heirs settled it in seaside Marseillan; in the Alps, Chambéry's makers built a lighter school that earned France's only vermouth appellation in 1932.
Dry white wine is aromatized with wormwood and a botanical bill (Dolin counts more than thirty Alpine herbs), lightly fortified, and kept low in sugar.
