Cachaça grew up beside the sugar mills of colonial Brazil in the early 1500s, among the first spirits distilled in the Americas, though the period paperwork is thin.
Fresh-pressed sugarcane juice ferments and is distilled to a legal 38 to 48 percent, in Brazil only; aging happens in amburana and other native woods, with more than thirty species in use.
