Sonora's outlaw agave spirit: 77 years banned, now proudly legal.
Sonora, Mexico
Sonora's governor outlawed it in 1915, and for 77 years vinateros kept distilling at hidden mountain stills until legalization in 1992 and a denomination of origin in 2000.
Wild and cultivated Agave angustifolia roasts in earthen pits, ferments, and is double distilled; the rules confine production to 35 Sonoran municipalities.
Roast agave and desert scrub with a dry, mineral smoke. Leaner and wilder-edged than most Oaxacan mezcal.
