Sailors and islanders have doctored rough rum with spice for centuries; the modern brand era began in 1944, when Seagram founded Captain Morgan in Jamaica, and took off when spiced rum hit the US in 1984.
A young, light rum base is infused with baking spices, usually vanilla, often caramel color and sugar. The spice bill is the signature; the base rum decides whether it is any good.
