Pineapple in a bottle: a tiki shortcut that also works in a spritz.
France and the Caribbean
Pineapple has flavored punch since the fruit first reached Europe as a luxury, and modern bottlings came out of the French liqueur houses that supply the cocktail trade. The tiki revival did the rest.
Pineapple macerates in neutral spirit or rum, then sweetens. Rum-based versions lean tropical and drier; neutral-based ones read closer to the fresh fruit.
Ripe pineapple and light caramel, sweet and round, with a faint tang that keeps it from cloying.
Did you know
Pineapple was so expensive in 18th-century Britain that people rented whole fruit for an evening to display at a party, then handed it back.
Also known as: giffard pineapple, planteray pineapple
