Modern, late 2010s
Non-alcoholic whiskey followed zero-proof gin into bars at the end of the 2010s, driven by drinkers who wanted an old fashioned or a sour without the alcohol rather than a soft drink.
Two routes: build the flavor from grain and oak extracts, spices and botanical distillates in water, or distill a real whiskey and then strip the alcohol back out. The second keeps more genuine barrel character.
Vanilla, toasted oak and caramel with a dry grain note and often a deliberate pepper or chili tingle standing in for the heat of the spirit.

The alcohol-removal route means some bottles genuinely were whiskey first: the liquid is distilled, aged, and only then has its ethanol taken out.
