Italy's pomace brandy: winemaking's leftovers turned fierce little digestif.
Northern Italy
Northern Italy's winemakers have long distilled the day's pressings, and Bassano del Grappa's Nardini, founded 1779, still ranks as Italy's oldest distillery.
Pomace, the skins, seeds, and stems left after pressing wine, is distilled fresh, traditionally by steam; the result bottles clear or rests in oak as riserva.
Grape skin, white flowers, and green almond with warm hay behind. Oak-rested versions add vanilla and spice.
Did you know
The name is protected: EU rules reserve grappa for pomace spirit distilled in Italy from grapes grown and vinified there, with carve-outs for Italian-speaking Switzerland and San Marino.
