Gin's malty Dutch ancestor: juniper over bready maltwine.
The Netherlands and Belgium
Juniper-spiced malt spirit was the daily drink of the Dutch Golden Age, and English drinkers carried it home, where it eventually slimmed into gin.
Pot-distilled maltwine, the bready heart, is blended with juniper-flavored neutral spirit; EU rules reserve the name for the Netherlands, Belgium, and small corners of France and Germany.
Bready malt and gentle juniper with white-pepper spice. Oude drinks rounder, closer to a young whisky than to gin.

Oude and jonge describe the recipe: jonge caps maltwine at 15 percent, oude starts there. The young style only arrived around 1900, once column stills made a lighter blend possible.
