Piedmont's pink aperitivo: rose and ginger laid over gentian and cinchona bark.
Asti, Piedmont, Italy
Giulio Cocchi's Americano recipe dates to 1891 and has run without a break; Rosa sets the same bitter base on a red-wine foundation.
Piedmontese red wines, with Brachetto d'Acqui giving the berry and white-rose character, take extracts of gentian, cinchona bark, citrus zest, and rose petals.
Red berry and rose up front, then ginger warmth and a quinine bitterness that dries the finish. Fuller than a blanc aperitivo, lighter than a red bitter.
Did you know
Aperitivo Americano has nothing to do with America. The word here comes from amaricato, Italian for bittered.
Also known as: cocchi rosa
