Clear South American grape brandy, and the engine of the Pisco Sour.
Peru and Chile, 16th century
Spanish colonists were distilling coastal vineyard wine by the late 16th century; the spirit shipped out through the Peruvian port of Pisco, took the port's name, and Peru and Chile have argued custody ever since.
Peruvian rules: eight permitted grapes, a single distillation in copper to bottling strength, no added water, then at least three months resting in vessels that give nothing to the spirit. Chile allows repeat distillation, dilution, and oak.
Quebranta gives quiet earth and hay; Italia and moscatel go jasmine and lime blossom. A grapey core, clean heat, and a finish that survives citrus and egg white.

Peruvian pisco goes into the bottle exactly as it leaves the still, between 38 and 48% alcohol; distillers aim the still run itself at drinking strength, since water may never touch it.
