True German schnapps is an unsweetened fruit brandy, but American bars took the word for a family of sweet, low-proof flavored liqueurs. Peppermint became the winter standard.
Peppermint oil or an infusion of the leaf flavors a neutral base, then sugar brings it up. Higher-proof versions keep more bite; the common bar bottling is deliberately soft.
