Arrived with the zero-proof wave, driven almost entirely by one drink: the Espresso Martini was the cocktail people most wanted an alcohol-free version of.
Cold-brew or extracted coffee sweetened and thickened with sugar syrup, often with vanilla and cacao, built to the viscosity of a liqueur so it shakes to a proper foam.
Roasted coffee, dark sugar and vanilla, with a rounder and sweeter finish than an espresso shot alone. Body is the point: it needs enough weight to carry a shaken drink.

The crema on a zero-proof Espresso Martini comes from the coffee, not the alcohol, so this is one of the few classics that survives the substitution nearly intact.
