Chicago's wormwood bäsk: a shot served as a dare and worn as a badge.
Chicago, by way of Sweden, 1930s
Carl Jeppson, a Swedish immigrant, sold his bäsk brännvin through Prohibition on the claim that it was medicinal, which the taste made plausible. Jeppson's Malört became a Chicago rite of passage and, in the 2010s, a citywide in-joke.
Neutral grain spirit steeps with grande wormwood, the same bitter herb behind absinthe, and is bottled with very little sweetening to soften it. Malört is simply the Swedish word for wormwood.
Grapefruit pith and burnt herbs up front, then a long, spreading bitterness that keeps arriving after the swallow.
