A survivor from the era when nearly every kitchen ingredient became a cordial. It almost disappeared in the late 20th century and came back with the classic-cocktail revival, largely on the strength of one drink.
Apricot and cherry kernels, rather than almonds, macerate in spirit and sweeten. The kernels carry benzaldehyde, the compound behind the smell of marzipan. The red is added.
