Mint cordials are old pharmacy stock; the famous origin story belongs to Émile Giffard, the Angers pharmacist whose white mint liqueur cooled the 1885 heatwave and turned his shop into a distillery.
Peppermint or Corsican mint steeps in grain alcohol for weeks, then is filtered and sweetened; the green version gets its color from mint leaves or added coloring.
