A bracingly dry Genoese amaro out of a 19th-century pharmacy.
Genoa, Italy, 1892
Created at a Genoese pharmacy and named for the hillside sanctuary above the city, it stayed a Ligurian staple and travels on its reputation as one of the driest amari on the shelf.
A large bill of herbs, roots, and barks infuses in spirit, with restrained sweetening and a rest before bottling.
Menthol, licorice, and dried herbs over a lean, almost austere bitterness. Very little sugar to hide behind.

At 40% it sits at the top of the amaro range, closer in strength to a spirit than to the aperitivi it shares a category with.
